Sticks’n’Sushi iced to perfection with Ice-O-Matic

Sticks’n’Sushi is a dynamic and innovative restaurant group from Denmark, founded some 24 years ago by brothers Jens and Kim Rahbek and family member Thor Anderson. With 12 restaurants in Copenhagen alone and more planned, regional Nordic magazines and newspapers describe them as the market leader in Japanese cuisine. Sticks’n’Sushi serve high-quality, fresh food based on a unique combination of traditional sushi and yakitori sticks from the grill. But for those less keen on fish, there is also a selection of chicken, pork, beef and vegetable skewers – all grilled fresh to order.

“From the very beginning, Sticks’n’Sushi has refused to be just another restaurant. The intention was always to be one of a kind. And today, it is just that! We’re known for great, fresh food and our progressive attitude is evident throughout everything we do and that translates into our purchasing decisions for our restaurants too. We prefer to have a personal relationship with our suppliers and having worked with Classeq over the installation of the sustainable Eau de Vie filtered water systems in all our restaurants we decided to install Ice-O-Matic ice machines supplied by them too, to reliably deliver all the ice we need, with the service back-up that we expect and know we are going receive.”

Ice on demand

“A lot of our dishes are reliant upon being kept on ice to keep them at their optimum serving conditions so for this we rely on having good quality flake ice on which to display the food. We have chosen Ice-O-Matic ice machines to help us keep up with the demands of our busy restaurants. In the smaller restaurants we serve over 1600 guests a week and in the larger restaurants, we serve over 4000 guests a week. So we have to ensure we have sufficient ice at all times to keep up with the pace and with these machines, we have no worries.”

Hygiene with Ice

“The latest three restaurants in Cambridge, Oxford and Victoria, all have Ice-O-Matic ice flake machines in them. We have two machines though generally within each restaurant which produce cube ice and flaked ice.  We mainly use the ice cubes for cocktails and we use flake ice for our sushi displays. The machines are very easy and straightforward to use and they deliver the capacity of ice that we need in all of our restaurants. They are also very easy to clean, which is a key consideration since ice should be treated with the same hygienic handling as food.”

“We have used a mixture of brands before Ice-O-Matic (Scotsman and Hoshizaki). The service and support has always been superb from Eau de Vie and so we saw no reason why it wouldn’t be the same with Ice-O-Matic – service and support is key to us.
